Simple to make, yet complex in flavor, we found that every part of this recipe was really necessary for the full experience.
In using sourdough, we found that the tang of the bread matches the tangy red fruit that we love so much in the 2019 Trine.
And while rosemary can be a dominating flavor when used with a heavy hand, here we found it made the wine more expressive. Before the pairing, the wine was mostly fresh and fruity. With the pairing, those quiet, savory notes were enhanced.
Finally, the olive oil really rounded out the dip. Without it, the wine would have dominated this seemingly delicate pairing. The food pairing makes the wine softer, more rounded, and more approachable with intriguing savory notes.
